Born in Sorrento, Carlo's culinary travels have taken him across the world. Learning first in the family kitchen, many family members participated in Carlo's training. The next stop was the Grande Hotel in Paris, spending seven years as an executive chef, and developing new recipes along the way. After honing his skills in Europe, Carlo came to the US in the early nineties. Discovering that North Carolina sorely lacked a traditional Italian scene, he moved to Raleigh and opened Casalinga in 1995. Tucked away in the corner of a small mall, Casalinga's preparation and presentation of traditional Old Style Italian dishes has led to its very loyal following.

The News and Observer has called Casalinga "..One of the best kept secrets in North Raleigh…"

Casalinga has led Citysearch's "Best Of" Italian section every year it has run.

Community events such as the March of Dimes, Crohns & Colitis Foundation, and other events keep Carlo busy, and Casalinga in the discussion around town.

Casalinga has recently expanded, with the addition of an incredible granite bar, and another intimate dining room, all while maintaining the familial atmosphere that makes Casalinga so popular.

Recently honored by induction into the prestigious Chaine des Rotisseurs, a worldwide culinary academy founded in 1248, Carlo's title of "Maitre Rotisseur," Master Chef, was conferred on May 2nd, 2006. Of course, this is not surprising to any who have enjoyed one of Carlo's incredible dishes.

Carlo was also recently honored by induction into the Federazion Italiana Cuochi, the Federation of Italian Chefs, making him officially Maestri di Cucina Italiani, a master of Italian cuisine.
